THE WINE - Winemaking

The grapes are pressed in one of the three wine presses at Wiston.

​

The pressing is light, so that only a small amount of the red pigment of the skins of the Pinot Noir is extracted and the juice is a very pale pink.  The pink colouring precipitates out in the course of the fermentation, leaving the wine a light straw colour.

The wine is fermented in 500 litre oak puncheons and in steel tanks.
